Pina Colada Recipe

Well, it's that time of year. It's hot, it's sunny, it's time to sit back, relax and enjoy a pina colada or three. Or at least that's what's done around my house on the weekend. Some of my favorite time is spent sitting with Jordan in the yard, basking in the sun's warmth, enjoying a fresh fruity cocktail. In the past we have had Raspberry Mojitos and Strawberry Basil Margaritas. This weekend, Jordan blended us the perfect Pina Colada, that I swear could give the ones made in Hawaii a run for their money.

What you'll need:
1 c cream of cocount
1 pkg cubed pineapple
3/4 c pineapple juice
1/2 c rum (if you prefer)
2 c ice cubes

Add it all in your blender and blend it till smooth (unless you prefer it a bit chunky, I however, do not)! Would you believe....our blender actually crashed and burned during the first attempt at this recipe. We rode our bikes to the store to get a new blender...that is how much we wanted to sit in the sun with a pina colada this weekend. Enjoy!

  1. I love pina coladas! And now that I have a magic bullet I can make single servings when ever I want XD Good thing I don't have the ingredients in my house or I'd never get my office painted lol. (love that first photo!)
