I looove fresh basil. It smells so good and is so damn tasty. But sometimes, I don't use it quickly enough and the leaves start to wilt. So when that happens, I turn it into pesto to serve with toast or coat chicken with. It turns out, it's really easy to make with ingredients that I always have in the kitchen!
Ingredients
2 c fresh basil leaves
1/2 c grated Parmesan cheese
1/2 c extra virgin olive oil
1/3 c walnuts of pine nuts (I used walnuts)
3 garlic cloves, minced
salt and pepper to taste
Add basil and nuts to a food processor and pulse a few times. Add the garlic, pulse a few times more.Add olive oil while still pulsing the processor. Next add the cheese and pulse again until blended. Add a pinch of salt and pepper to taste.
Spread it on some toasted bread for a tasty appetizer! xo JA
